nMap runs from a flash-drive just fine provided that the security-settings on the host allows you to start it .
I also seem to remember there was a portable Ethereal (now WhireShark)
but I'm not sure that it works from restricted user-accounts .

Wireshark has u3 version only.
I have admin rights, simply need that all installed drivers removed after using software
