If I'm using this fire fox portable from my work computer and searching the web can the it guys look at my searches from the server or locally on my machine(or their machine)?

If the IT department monitors network traffic they can tell exactly what sites you go to. Mozilla Firefox Portable Edition is stealth in the sense that it will clean up traces on the host computer. However, it still connects to the same network as all other internet applications used at your work, so if the IT dept. monitors network traffic, they can still see what you are doing.
