All excetp thunderbird 2 and open office are freeware/payware and not open source, so not gonna happen here.
Thunderbird 2 has a beta in the forums, go check it out.

Edit: sorry just read your post on Open office, a little vague on the problem isn't it. Doesn't seem like you gave it a fair shake. I personaly think that and Office 2007 are about the same in features and workability. The prettiness is the only difference. Maybe you just work with it awhile and get used to it.

My problem with Open Office, and I've installed and reinstalled the whole thing a number of times, is that after running any one of the apps once, or maybe twice, none of the apps will run again. OpenOffice just crashes and won't work at all. Even the splash screens won't show up.
Actually, if OpenOffice would work, I'd use it.
Actually, I find AbiWord works just fine, although it's not as configurable as I might like.

PowerPoint Viewer can't be "portablized" but just use OpenOffice Portable Impress. Sumatra Portable is a good PDF viewer. Notepad2 Portable is a good text editor. Why not just use Thunderbird Portable's address book? Thunderbird Portable 2.0 Prerelease 2 works great. Would SnackAmp Portable work? You see, much of the things you are asking for are already here. Just get used to the interfaces.

I'm an ex-SnagIT user and now recommend FSCapture and it's portable version from the publisher. The current release (as of yesterday) is 5.3 and it is being actively maintained freeware for personal use. I am not associated with the publisher.

The graphics programs you mentioned are easily replaceable with Gimp Portable on this website.
In earlier discussions here, others have suggested using the ThunderbirdPortable address book. I have not tried it yet.
Text editors are always a matter of personal preference. That said, GVim Portable is about as well maintained and usable editor available in a portable format. Other high quality portable free editors can be found by searching for PFE, Notepad2Portable, PSPad, Notepad++, etc. Of course, you can also use the text file editing of AbiWordPortable or OpenOffice.org WriterPortable.
