I understand it's not an open source app, therefore it cannot be included between PersonalAppls, but iTunes on Windows seems a good candidate for being used in "portable mode": it's a big .exe file, with tons of (discardable) resources to different languages.
Any expert has ever tried it from a USB drive?

iTunes: a good candidate for being portable?
1. Get rid of anything you dont need
2. Compress all DLLs & EXEs with UPX
3. Compress all zips, jars, etc to their max level
4. Run while watching with RegMon and FileMon
5. Submit your findings here
Anything I missed?

Portable Winamp?
The portable version of Winamp 5.1 lite has an iTunes plugin and iPod support.

I think I got it from: no-install.com
If it's not there, you'll have to search on google for "Portable Winamp".
You can use this to manage your iPod without iTunes. Another plus, this is already portable and there are versions for Windows, Linux, and Mac OSX.

iTunes takes alot to load, killing your USB drive quicker. iTunes is a good program, but not to cary with you.
Portable Apps Own
Try using Yamipod, it's small, simple to use and portable. It has a few bugs but you get that.
