The most common reason to have a web server on a flash drive is for development. That way, I can carry, say, my complete Apache web server and mySQL database and do Drupal development on any computer I come across. (Drupal is the web-based content management system that PortableApps.com runs on).

I'm currently working on XAMPP Portable (in PortableApps.com format), but am also working on what I reckon is a much better project - MicroApache Portable (MicroApache site). MicroApache is tiny, and thus much better for a USB disk.

I created a wiki using MediaWiki and XAMPP. I don't run it off my stick, but I tried it and it works.
In a practical sense, I copied that setup from my stick to a W2K computer at work, and we are now using that wiki throughout my dept - since we can't run a server (our network guys would be pissed) and we can't afford to get one of the ones in our server farm (again, the network guys would charge us back an arm and a leg)
I made this half-pony, half-monkey monster to please you.
I tried using it, I couldn't figure it out.

I use it for web dev too, so I can have my server all configured. I mainly use Joomla instead of drupal, but xampp's still pretty useful.

what kind of core features does Joomla have? Is it rather fast?

My suggestion would be to try Joomla! yourself, and read up on it a bit more. Otherwise we'll start getting the forums off-topic.
