Would it be possible to open Xenon instead of Windows Explorer when the Documents, Music, Pictures, etc... buttons in the PortableApps Menu are clicked? I might actually start using them, if that's possible.

Hopefully in the next release of the menu this feature will be possible. I really want it myself.
