Unfortunately, we can't make iTunes portable because of the license agreement; any portable iTunes is illegal.
However, we do have screen recording software & video editing software. VirtualDub handles both functions nicely; you can find it here.
There are a lot of unofficial portable releases of various RPG makers; here's the search you'll need.
