I'm trying to conserve space on the menu. So rather than display all six separate icons, I want to hide those & just show the main (non-specific) OOo launcher. Problem is, I can't find a way to show the main OOo icon.
Hiding the other six is easy, just right-click > hide, but can anyone see a way to show the main launch icon in the menu?

I just installed OpenOffice 3.2.0 on the PortableApps 2.0b4 menu.
It shows 7 icons, including the main launcher "OpenOffice.org Portable".
So if you install the latest, you should be able to just hide the other six.
Of course, whichever icon you use, you can then open any type of OpenOffice document from it - they are pretty much all the same program.

There is an entry for that you can put in your ini called "Show Single App Icon" so it only shows one icon for Apps with more than one. No need to hide them manually.
And if you haven't already, update to the latest version (1.6.1) as it has some improvements

Just remember that it is a global setting.
So, this would apply to all apps in the menu with more than one icon.
Luckily, for now, I don't think that there are any other Official Apps with multiple icons.
