Has anyone tried using SNES, MAME, GBA, or any of the other game emu's? I programmed a few of them to work and they seem pretty stable so far in my regression testing. I will try to find some open source versions and submit them here for others to share.

Well, there's already a Pre-Release of ZSNES (this DevTest was supposed to supersede it, but the download link is dead), and there's a Development Test Release of MAME, and also one of VisualBoy Advance-M.
I think those should cover what you're asking for, but none of them are Official PortableApps.com Apps so they may not be perfect, but you can test them and post feedback and hopefully someday they will be.
